When shopping for Extra Virgin Olive Oil (EVOO) in Australia, you might notice a small percentage listed on the label or mentioned in technical descriptions—the acidity level. Contrary to what the name suggests, this isn’t about how “sour” or “acidic” the oil tastes. In fact, you can’t taste acidity at all.

Instead, acidity is the most important chemical indicator of how much care was taken during the harvest and pressing of the olives. At Olio Clemente Australia, we treat acidity as our quality report card, ensuring every bottle of our Italian EVOO meets the highest international standards.

What is Olive Oil Acidity?

In scientific terms, acidity measures the amount of free fatty acids (FFAs) present in the oil.

Naturally, fatty acids in olives are bound together in molecules called triglycerides. When the fruit is damaged, bruised, or left too long before pressing, these bonds break, releasing “free” fatty acids. The higher the concentration of free fatty acids, the higher the acidity, and the lower the quality of the oil.

The Global Standard: Why 0.8% Matters

The International Olive Council (IOC) has set strict limits to protect consumers. To be legally classified as Extra Virgin, an oil must have a free acidity level of 0.8% or lower.

  • Extra Virgin Olive Oil: Acidity ≤ 0.8% (The highest quality).
  • Virgin Olive Oil: Acidity up to 2.0% (Good, but with slight defects).
  • Lampante Oil: Acidity > 2.0% (Not fit for human consumption without refining).

While 0.8% is the legal limit, premium producers like Olio Clemente aim for a much lower level. Our organic and premium selections often boast acidity levels as low as 0.3%, a direct result of our rapid “grove-to-mill” process, where olives are pressed within hours of being picked.

Why Low Acidity is Better for You

For home cooking, choosing a low-acidity oil isn’t just about labels—it’s about the tangible benefits in your kitchen:

  1. Greater Stability & Higher Smoke Point: Lower acidity means the oil is more chemically stable. This allows it to withstand heat better, making it safer and more versatile for everything from light sautéing to roasting.
  2. Increased Shelf Life: High acidity is a sign of early oxidation. By starting with a low-acidity oil, you are buying a product that will stay fresh and vibrant in your pantry for much longer.
  3. Maximum Health Benefits: Low acidity is typically a marker for high polyphenol content. Because the olives were handled gently and quickly, they retain the powerful antioxidants that support heart health and reduce inflammation.
  4. Cleaner Flavour: While you can’t taste the acid itself, high acidity often accompanies “muddy” or fermented flavours. A low-acidity EVOO like Olio Clemente offers a clean, bright, and fruity profile.

The Olio Clemente Commitment

Maintaining ultra-low acidity requires an obsession with detail. It means harvesting olives at the perfect stage of ripeness, avoiding any bruising of the fruit, and using cold extraction temperatures below 27°C.

When you see a low acidity level on an Olio Clemente bottle, it is our promise to you that the oil inside is as close to the natural fruit as possible—pure, fresh, and authentically Italian.
