The Production Process – Preservation and Storage
Preservation and Storage
The production process Preservation – Once the oil gets out of the centrifugal separator it is ready for consumption. The product contains solid suspended residues and appears murky. In the resting phase, the solid residue transfers onto the bottom of the container and oils spontaneously clarify.
Following extraction and filtration, the EVOO is stored in temperature-controlled stainless steel tanks. These tanks are designed to prevent light and air exposure, with controlled temperatures typically maintained between 14-18°C (57-64°F). This stable environment slows down oxidation and prevents the development of off-flavors. Nitrogen blanketing is often used to displace oxygen within the tanks, further minimizing oxidation.
During the production process Preservation, regular quality control tests are conducted throughout the storage period, assessing factors like acidity, peroxide value, and sensory attributes. These tests ensure the oil maintains its “extra virgin” status and meets the required standards. Proper storage also involves minimizing exposure to strong odors, as EVOO can absorb them, altering its flavor.
When the oil is ready for bottling, it is crucial to use dark glass, tin, or specialized plastic containers that block UV light.

These containers are filled and sealed under controlled conditions, often with nitrogen flushing, to further reduce oxygen exposure. Proper storage instructions are then communicated to consumers, emphasizing the importance of keeping the oil in a cool, dark place away from heat sources. This comprehensive approach to preservation and storage ensures that EVOO retains its exceptional quality and nutritional benefits, delivering a premium product to consumers.
