At Olio Clemente Australia, we pour our heart and heritage into creating the finest Extra Virgin Olive Oil (EVOO)—a true liquid gold that forms the foundation of great Italian cooking. But did you know that even the highest quality EVOO has four powerful enemies hiding in your kitchen?

Unlike fine wine, extra virgin olive oil does not improve with age, and its delicate flavour and beneficial properties can be quickly compromised if not stored correctly. To help you preserve the exquisite taste and health benefits of your Olio Clemente EVOO, here is your essential guide to proper storage.

The Four Foes of EVOO: Heat, Light, Air, and Time

To ensure your oil stays fresh and flavourful down to the very last drop, you must protect it from four key elements:

1. Heat: Keep it Cool, Not Cold

High temperatures accelerate the oxidation process, causing your oil to go rancid faster and degrade its polyphenols (the healthy antioxidants).

  • The Big No-No: Never store your bottle on or near the stove, oven, or even on the counter in direct sunlight. These spots expose the oil to frequent temperature fluctuations and heat surges.
  • The Ideal Spot: Store your EVOO in a cool, dark cupboard or pantry. The ideal temperature range is generally between 18°C and 24°C (65°F and 75°F)—standard room temperature is usually fine, but cooler is better for long-term storage.
  • A Note on Refrigeration: While cold temperatures won’t harm the oil’s quality, they will cause it to solidify and turn cloudy. This is perfectly normal and reversible when brought back to room temperature, but for daily use, it’s inconvenient.

2. Light: Embrace the Dark

Ultraviolet rays, whether from sunlight or even strong kitchen lights, are another major catalyst for oxidation and spoilage.

  • Why Our Bottles Are Dark: You’ll notice that high-quality olive oils like Olio Clemente come in dark glass bottles or opaque tins. This isn’t just for aesthetics—it’s to filter out damaging light.
  • The Rule of the Cupboard: Even in a dark bottle, direct exposure to light is best avoided. Always store your EVOO inside a closed kitchen cupboard, pantry, or storage area. If you decant a small amount into a cruet for convenience, ensure that the container is also opaque and kept away from windows.

3. Air (Oxygen): Seal it Tight

When exposed to oxygen, olive oil begins to oxidise, leading to a loss of flavour, aroma, and health benefits—this is what ultimately causes rancidity (often described as smelling like old crayons or stale walnuts).

  • Cap it Immediately: Always secure the lid or cap tightly after every single use.
  • Avoid Pour Spouts: While convenient, squeeze bottles or those metal pour spouts that stay permanently on the bottle introduce air constantly and should be avoided for long-term daily use.
  • Size Matters: If you don’t use olive oil frequently, consider buying smaller bottles. The less empty space (headspace) in the bottle, the less oxygen there is to react with the oil. Our range offers sizes to suit every cooking need!

4. Time: Use it Up!

EVOO is a fresh product. While an unopened bottle can last for a significant time, once that seal is broken, its peak flavour begins to fade.

  • The 3-Month Rule: For the best flavour and maximum health benefits, we recommend finishing an opened bottle of Olio Clemente within 30 to 60 days. After 3-6 months, while the oil is still safe, its vibrant fruity notes and peppery finish will diminish.
  • Check the Harvest Date: Always look for the harvest date on the label. The closer you consume the oil to this date, the fresher and more potent the flavour will be.

By following these simple storage tips, you ensure that every dish you prepare with Olio Clemente Extra Virgin Olive Oil retains the rich, authentic taste of Italy we promise. Happy cooking!
