From Grove to Table: A Look at our Extra Virgin Olive Oil Harvest Journey
Olive oil harvest process – ever wondered what goes into a single bottle of premium Extra Virgin Olive Oil (EVOO)?
At Olio Clemente Australia, we believe that the secret to our world-class flavor lies in the journey from the soil to your table. The Italian olive harvest is more than just a seasonal task; it is a meticulously timed ritual that balances ancient tradition with modern precision.
For our Aussies and Kiwis customers, understanding the harvest process reveals why Olio Clemente is the gold standard for Italian olive oil in Australia.

The Crucial Window: Timing the Harvest
In the sun-drenched groves of Puglia, Italy, timing is everything. Unlike many commercial oils that wait for the olives to over-ripen to maximize oil quantity, we prioritize quality.
- The Early Harvest: We begin our harvest during the invaiatura—the exact moment the olives start turning from green to purple.
- Maximum Polyphenols: Harvesting early results in a lower yield of oil, but that oil is incredibly concentrated with polyphenols (antioxidants) and a vibrant, peppery flavor profile.
- The Freshness Factor: Once an olive is picked, the clock starts ticking. To maintain the “Extra Virgin” status and ultra-low acidity, our olives are transported to the mill and pressed within hours of leaving the tree.
The Art of the Extraction: First Cold Pressing
The journey from fruit to liquid gold happens at the mill, where we use a combination of tradition and state-of-the-art technology to extract the oil without damaging its delicate properties.
- Cleaning: The olives are washed in pure water and cleared of any stray leaves or twigs.
- Crushing: The fruit is crushed into a thick paste. This stage smells incredible—like freshly cut grass and green tomatoes.
- Malaxation: The paste is slowly churned. This allows the tiny oil droplets to congregate. At Olio Clemente, we strictly monitor the temperature to ensure it never exceeds 27°C. This is the definition of “Cold Pressed.”
- Centrifugation: Finally, a centrifuge spins the paste to separate the water and solids from the pure, vibrant green oil.

Quality Control: From Italy to Australia
Before any oil is bottled, it undergoes rigorous testing. To be certified as Extra Virgin, the oil must have zero sensory defects and an acidity level below 0.8%. Olio Clemente consistently surpasses these standards, offering one of the freshest and most stable oils available to Australian home cooks.
Once certified, the oil is stored in temperature-controlled stainless steel vats under a blanket of nitrogen to prevent oxidation. It is then bottled in dark glass to protect it from light during its journey to your pantry.
